Cinco de Next Year Part Dos


 We decided to throw together a little last minute Cinco de Mayo dinner party at my house, and just a few texts later we had a full blown fiesta!  I kept it easy and relaxing with some fajitas for the main course, while some of our guests offered to serve up some of their own recipes.


 So, here's the part where I usually post some highlights of the party; some pictures of crafty projects and what not.  But, you did read the "last minute" part, right? 


Sure, I strung up some lights on the back porch, and chopped oodles of toppings for everyone to enjoy on their fajitas.  I even sprung for a pinata for the kids to enjoy!  




But, the real highlight of the party?? Armadillo Eggs!! Never heard of them?  Me either, until Saturday night.  These little bites of goodness took the spotlight!  A jalapeno, stuffed with cheese and surrounded by what amounts to be a sausage ball. 


You're going to want to tuck this recipe away for next year's festivities....


Jennie's Armadillo Eggs


24 jalapeno peppers
1 lb. sausage
2 cups All-Purpose Baking Mix
1 lb. cheddar cheese, shredded
1 tbsp. crushed red pepper flakes
1 tbsp. garlic salt
1 lb. Monterey Jack cheese, cubed


Preheat over to 350 degrees.  Lightly grease a medium baking sheet.  **ALWAYS wear gloves when working with hot peppers** Cut a slit in each pepper, remove seeds and pulp.  In a medium bowl, mix sausage, baking mix, cheddar, crushed red pepper, and garlic salt.  Stuff jalapenos with Monterey Jack.  Shape sausage mixture around peppers to form balls.  Arrange on prepared baking sheet.  Bake 25 minutes or until lightly browned.

  1. “You're going to want to tuck this recipe away for next year's festivities…”---Aaah.. That’s for sure! Armadillo eggs really look and taste so nice! It tastes great with green salad, especially when you have a fresh and delicious dipping sauce! YUM!!
