Mummy Pumpkin Cheesecake Poppers






October is in full swing and the opportunities to get crafty this month are endless. One of our favorite festive treats is dipped in chocolate and filled with pumpkin cheesecake... need we say more? These mummy pops are so cute, it’s scary! And the best part? No baking required. We’ll show you how you can make your own and be the hit of any Halloween party dessert table.

Shopping List

  • 1¾ cup cinnamon graham cracker crumbs
  • ¼ cup canned pumpkin
  • 3 tablespoons powdered sugar
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon salt
  • 3 ounces cream cheese, softened
  • 2 bags white chocolate chips
  • red food coloring or icing
  • toothpicks
  • baking sheet
  • foil
  • paper straws
1. Let’s get started! In a bowl, combine graham cracker crumbs, canned pumpkin, powdered sugar, cinnamon, salt, and cream cheese. Mix together. Melt in ½ cup white chocolate chips.


       
          2. Cover and chill the mixture for about an hour, or until it is solid enough to begin rolling into balls. When it has a cookie dough-like consistency, roll into 12 to 14 balls and place a toothpick in each one. (We used these sandwich toothpicks because we had them on hand. And yes, Montana calls them party picks).



3. Melt the remaining chocolate in a small bowl and begin to dip each cheesecake ball in the chocolate. Make sure you thoroughly coat them and shake off excess. Place each ball on a foil covered baking sheet, stick half a paper straw in the top of each, and chill for 5 minutes, allowing chocolate to harden.

4. Drizzle melted chocolate over cheesecake balls and add dots of red icing (or food coloring!) for eyes. Store chilled!



Voila! These delicious little mummies are ready to be enjoyed by all!

Oh Sugar Sugar

I don't know about you, but I'm a sucker for a good sugar cookie.  I can't bake, I can cook all day long; but baking is not my thing.  The general consensus of my friends seems to be that I lack the patience to exactly measure the ingredients and follow the directions..."it's science" they say.  Makes sense, I never liked science.  Whatever....I like to just throw things in the pot until it tastes good!

Thank goodness Liz's daughter can bake. They whipped up some awesome sugar cookies they found on good 'ole Pinterest.  Here's the original:

Tasty Tuesday #28

Carrot Cake Cookies with Brown Sugar Cinnamon Cream Cheese Glaze....a mouthful to say, AND a mouthful to eat! They look like little cake servings...oh and they're made from CAKE MIX!!  Thanks to Kerri over at Shaken Together for sharing the recipe for these little bites of Holiday goodness!




 E and I are going to a Cookie Exchange and Brunch this week.  I think I'll be trying to bake up something with lemons since we brought a ton home from a visit to the hub's family this past weekend.  What have you been cooking up this Holiday Season?

Sorry I'm a little behind schedule today.  It's been a busy week of parties and school projects AND we're freshening up the storefront with some new paint and a few fresh display ideas.  I hope you will all exercise your right to vote to today!  And now, on with it...  This week I'm loving this Healthy Pizza Alternative from Potholes and Pantyhose!

Tasty Tuesday #24

The weather has gotten colder here and we are thinking about our friends in the Northeast weathering this bad storm.  We wish them well and hope everyone stays safe.

This week I'm loving the Ham Spinach Cups from Joann Growing in Grace.  I never knew that ham could cook to form a yummy container for spinach and cream cheese!  I made these last night and the whole family agreed that they were a winner!

Tasty Tuesday #23

You know by now I'm a sucker for a cocktail.  Smart School House made a sweet one that will work at the next Fall or Halloween party.  I haven't made this one because I couldn't find cupcake vodka, but I did find cake vodka and whipped cream vodka.  I'm thinking of experimenting with those to see if I can recreate this Halloween concoction!

Tasty Tuesday #22

So, I've decided to start sampling the recipes that we feature every week on Tasty Tuesday.  Last week I made the cake and it was gone in a flash!  I had to make it late in the evening and the smell was so good that the kids complained of not being able to sleep!  It tasted delicious too!  And I had no problem letting my family devour it since it has so much pumpkin in it.  I figure it's practically a vegetable serving, right?

This past week Mary over at Go Ahead...Take a Bite made my mouth water with her recipe for Saltimbocca alla Romana.  I'm actually preparing to cook this tonight for my own family.  I love that she uses chicken in place of what would normally be veal.  The chicken is much less expensive than the veal, so I get to stretch my dollar for my very active family of four!

Joan over at Chocolate, Chocolate and More! shared a cake recipe that had our mouths watering!  This recipe for Chocolate Pumpkin Spice Cake uses real pumpkin and chunks of chocolate.  I can't wait to try this one for a family fall gathering.

Tasty Tuesday #20

It's officially October!  Time to put out the first round of seasonal decor.  I've never been one to really decorate for Halloween.  I'm not in to the scary witches and ghosts, but I do love a cute jack o lantern here and there.  In fact, most of my Fall decor revolves around pumpkins.  Perhaps that is why I am loving Lizy B's Pumpkin cookies this week!

Tasty Tuesday #19

Raise your hand if your child likes spinach.  Anyone, Anyone, Buehler???? Yeah, that's what I thought.  I am fortunate that my kids will eat raw, baby spinach in their salads; but that gets old and I'd love to have other ways to prepare it.

Spinach is such a super food - boasting high levels of the good stuff (vitamin A, Iron, Protein) and little to nothing of the those things that we tend to overeat (calories, fat, sodium).  Marigold Mom showed us how to make something super tasty from our green little friend, the spinach leaf.

Tasty Tuesday #16

Eek! We missed a week!  Things have been so crazy with back to school that I completely missed last week's post!  Today I'm feeling pretty fancy because I'm cooking up Labor Day Linner (that's what we call it it when we eat our meal between lunch and dinner) in my triple crockpot.  I've had this thing since Christmas, but today is the first day I have pulled it out and I LOVE it!  My brain is already planning a "Soup-er Bowl Sunday"  and a  "TresQueso de Mayo". 


If you've been following this blog for very long, then you already know I'm a sucker for a good cocktail! And Smart School House has a yummy recipe that beats the heat!  I especially love the 21+ tags so the parents know to keep the kiddos away.

Tasty Tuesday #11

This week an interesting recipe caught my eye!  Kathe With an e shared with us her recipe for Coconut Maple Bacon Cupcakes. I've had chocolate covered bacon, and bacon flavored ice cream, but never have I had bacon in my cupcake!  Still, I am in the south and I hold fast to the belief that bacon and butter go well with everything!
